Lately my two-year old has been singing “I can sing a rainbow” in a true two-year-old fashion: repetitively.
After waking up at 1am to “listen with your eyeees, listen with your eyeeees,” I decided enough was enough and worked hard to change our vocal rotation to songs about twinkling little stars, mice running up clocks, highways to hell; anything else.
My blanket rainbow ban was working.
That is until I went to Piggyback Café in Brisbane’s west-side. And ordered the most radiant meal I’ve ever had in my life.
Was I seeing red? Or yellow or green and blue? Let’s take a look.

I’ll be honest, it’s hard to be angry when someone serves you an entire rainbow on a plate and in a cup. In fact I’m still smiling about this meal. It was just so… happy!
Piggy Back Café is the little sister of PawPaw restaurant in Woolloongabba, but has carved a name for itself in its own right on the Brisbane foodie scene.
If you haven’t already guessed, this is the number one go-to place for a rainbow coffee.
In order to preserve the beautifully-crafted rainbow art in the steamed milk, a side shot of double espresso is served for you to pour in yourself after you’ve taken all your insta-photos.

The only way I could further enhance my consumable colours was to order the Pink Pitaya Panna Cotta: Dragonfruit Panna Cotta with Housemade Granola, Honeycomb, Edible Flowers and Berries. Not only was this the prettiest granola I’d had in awhile, it was right up there as the most delicious.
I can’t write about this meal without starting with the panna cotta. Panna cotta with breakfast is a decadent delight as it is, but add in the wow factor of pink pitaya to it and you have yourself something really special here.
The panna cotta was lusciously creamy, with just a hint of tropical sweetness from the pitaya so that it wasn’t too sweet. That was lucky, seeing as there was a whole slab of fresh honeycomb in the bowl adding a candied element to the dish.
The granola itself was packed full or roasted nuts and seeds, giving the necessary crunch to the silky panna cotta. Plump, fresh berries were of the highest quality and just bursting with juicy flavour.
